Don’t we all love brownies? Chocolate with nuts and a nice mist texture that’s how a good brownie should be. Most brownies are filled with tons of added sugar and fat. I tried to find a way to take the fat and sugar out of the recipe without giving up the sweetness and juicy texture. The secret to the Vegan Almost Healthy Brownie is dates and prunes.
The dates give some sweetness and the prunes together with the aquafaba keep the brownie moist and juicy. I know it is hard to believe but it is true. This is a vegan almost healthy brownie. Why do I say almost? Even tough there is no sugar or fat added the brownie still contains quiet a lot of carbohydrates from fruit sugar and it is not a diet food. If you are counting calories this is not the right recipe for you.
Not everyone is familiar with aquafaba? What is that? aquafaba is the liquid from your canned chickpeas, the stuff you normally through away. Not sure how someone ever discovered that, which right mind would start to beat the liquid of their canned food but fortunately someone did do that. The liquid is like egg whites. When you beat them for a while they will turn into this nice stiff white fluff. You can use this nice fluff to make desserts like this brownie a little bit fluffier.
Vegan Almost Healthy Brownie

- 2 cups Almond Flour I even used my left over almond pulp from making almond milk
- 1 cup Dates
- 1 cup Prunes Dried
- 1 Vanilla Bean or 1 tsp. Vanilla extract
- 1/2 cup Cocoa Powder – Not sweetened
- 1/2 tsp. Cinnamon
- 1 tsp. Baking Soda
- 2 tsp. Tapioka Flour
- 1 cup Almond milk
- 1/2 cup Pecan Nuts – Walnuts work as well
- 1/2 cup Aquafaba – Probably from one can of chickpeas
Instructions
- Beat the aquafaba in a seperate bowl until you have this nice, stiff fluffy foam. You should be able to turn the container without anything dripping out.
- Chop the pecans in small pieces on a chopping board.
- Put all dry ingredients besides the pecans in a bowl, add the almond milk and beat until you have a nice dough texture. Add the pecan pieces to the dough, gently fold into it.
- Preheat your oven to 350° Fahrenheit.
- Start adding some beaten aquafaba to the brownie dough and gently fold it into the dough until everything is gone and your brownie dough has a nice fluffy texture.
- Grease a brownie cake tin with some coconut oil, best also place some baking paper in the tin that does stick out at the sides. The baked brownie will still be very moist and you need to make sure that not everything is sticking at the bottom when you remove the brownie from the tin.
- Put the tin in the oven and bake for 40-60 minutes, depending on the height of your tin. Make sure the top of the brownie does not get too dark. You can always cover it with aluminium foil to stop the browning process.
- When the brownie is done, let it cool out a bit and remove from the tin.

Best served luke warm with some ice cream on top.
